LENTIL BURGER
INGREDIENTS:
Tzatziki
INSTRUCTIONS:
- 1 cup cooked lentils, drained (see notes)
- 1/2 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 1/2 cup cilantro leaves, finely chopped
- 1/4 teaspoon garlic powder
- 1 pinch cayenne pepper
- Salt to taste
- 1 egg - lightly beaten - or 1 flax egg if you are egg-restricted (see notes)
- 2 tablespoons olive oil
- -Added some homemade tzatziki, avocado, lettuce and anything else you would put on a burger!
Tzatziki
- 150g Greek yoghurt.
- 1/2 cucumber.
- 2 - 4 crushed garlic cloves.
- 1 tbsp olive oil.
- 1 tsp lemon juice (or white wine vinegar)
- 1 tsp chopped or dried mint (or dill)
- 1/2 tsp salt.
- Pepper to taste.
INSTRUCTIONS:
- Mix all ingredients in a medium bowl.
- Place half of the mixture in a small food processor and process until it has a paste consistency. Combine with another half of the mixture.
- Use a 1/4 cup to divide the mixture. Using your hands form disks of approximately 3 inches in diameter.
- Heat the olive oil in a skillet over medium heat. Cook the patties for 2--3 minutes each side or until golden brown.
